Granola with Lemon and honey Yogurt

I love granola. I eat it for breakfast, a snack or even as a treat after dinner when I crave something sweet. This granola is full of good things. Healthy fats, fiber, and antioxidants. Paired with the yogurt you get lots of protein as well. It is so easy to make and is much cleaner than store-bought granola. You can add whichever nuts and fruits you please.

For granola: Makes about 4 1/2 cups

4 cups old fashioned rolled oats

1/2 cup coconut oil

4 tablespoons butter

1/2 cup honey

2 teaspoons vanilla

1/2 cup chopped nuts (I prefer slivered almonds but you can use whichever nut or mix of that you like)

1/2 - 1 cup dried fruits

1/2 cup shredded coconut

Pre heat oven to 300. Line a large baking sheet with parchment. In small saucepan place coconut oil, butter, honey, and vanilla. Bring to simmer and remove from heat. Add oats to large bowl and mix in oil mixture. (If you like the nuts in the granola to be toasted you can add them here as well). Mix well and pour onto baking sheet. Place in oven. Stir granola every 10 minutes to get browning even throughout. Cook about 30 minutes. Remove and cool completely. Once cooled, add nuts and dried fruits. Store in airtight container and store up to 2 weeks.

For lemon honey yogurt: makes 1 cup

1 cup plain 2% greek yogurt

juice of 1 lemon (reserve zest if desired for garnish)

1-2 tablespoons honey (add to your desired sweetness)

In small bowl add all ingredients and mix well.

Serve granola with yogurt and top with fresh or frozen berries if desired.
